Hello! My name is Marco, I am an Italian chef based in Lucca, Tuscany. I cater to locals and tourists for events ranging from small get-togethers to weddings and everything in between.
My philosophy is simplicity. My menus features simple yet delicious dishes with seasonal ingredients sourced from local farms and suppliers. Seasonality, quality, deliciousness, and freshness are the hallmarks of my cuisine.
Drawing on my international experiences, I focus on elevating the finest ingredients through a blend of classic, modern, and international techniques, infusing a modern twist into traditional Italian dishes.
About me
After graduating in 2009 from "Alma" Scuola Internazionale di Cucina Italiana, I moved to Paris. During my six years there, I delved into French gastronomy, starting with roles in Michelin-starred restaurants like Saturne and Passage 53. Later, I shifted my focus to the 'Bistronomie' movement, working at places like Chateaubriand and Passerini.
From 2016 to 2020, I continued my culinary journey in Spain, taking on the role of Sous Chef at "Nobu."
In 2021, I embraced the opportunity to lead the kitchen at Villa Lena, a luxury agriturismo nestled in the heart of Tuscany. Here, I revamped the restaurant, infusing a modern, farm-to-table ethos into our offerings. Collaborating with Gigi Nencioni, our gardener, I crafted a menu that truly represents the essence of the Tuscan terroir.
Today, you’ll find me in kitchens across Tuscany and beyond, bringing my experience and passion to each event. Through Baldo Catering, I focus on thoughtfully crafted dishes that honor local ingredients and capture the essence of Italian flavors with a global touch. Each menu is a unique expression of my culinary journey, designed to create memorable moments and meaningful connections around the table.
